Coyote Kitchen definitely serves a unique twist of Mexican-esque food with very interesting combinations of flavors. The majority of the menu seems similar to any other Mexican restaurant's menu with tacos, bowls, salads, and burritos, so I was instantly drawn to the boats, which sounded like the most differentiating dishes in the menu.
